Toast to add another location in Red Bank
Asbury restauranteur will take over Broadway Diner on Monmouth Street
Toast owner Amy Russo will open another of her breakfast and lunch restaurants in Red Bank in the current location of the Broadway Diner [right] on Monmouth Street.
The Asbury Park restauranteur [shown above in Toast Asbury] said she expects ownership to formally transfer by the end of the month.
The Red Bank restaurant will be named Toast Red Bank.
Russo opened Toast on Cookman Avenue in Asbury Park in July, 2011. Her first restaurant, also named Toast, opened in Montclair in 2007.
The Red Bank location will be closed for about 8 weeks after Russo takes ownership so the interior can be updated into the local luncheonette feel of her two other locations, she said. The hours of operation are still under review and will be determined during the 8 week transition to reopening, said Russo.
Russo’s father, who owned diners in different parts of the state, owned half of the Broadway Diner. He passed away early this year and Russo is buying out her father’s partner.
Russo said she had long wanted to open a restaurant in Red Bank, and her father thought eventually she would take over the diner.
“My Dad and I were going to do this together — transition the diner into Toast,” she said.
